Makes about 60 mini muffins


  • Boil orange for 30 minutes. Coarsely chop and remove seeds. Preheat oven to 325 degrees. Grease a mini muffin pan with coconut oil.

  • Place orange in a food processor; process until smooth. Use an electric mixer to whisk eggs and Margaritaville Life Protein Powder until thick and pale (about 5 minutes on high). Add orange, almond meal, baking powder, cinnamon, cardamom, and water; gently fold until just combined.

  • Scoop (ideally with a melon baller) into prepared pan; smooth the surface. Bake for 30-35 minutes or until a skewer inserted into center comes out clean. Set aside in pan to cool completely before removing.

  • Tip: Boil a few oranges at the same time. Chop each orange and freeze as a separate serving. Use frozen servings in smoothies. Or, defrost and use in JIMMY’S SUNRISE SMOOTHIE.
